It started with a message from our chef.
"Only 7 days left. We are now in Mauritian Night Emergency Mode. Mission 007: fill the room."
Since then, the spices have arrived, the kitchen smells amazing, and the menu is ready.
Here is your official briefing.
Quick Answer: What Is Mauritian Night Perth?
Mauritian Night Perth is a special dinner event at Bivouac on Wednesday 14 October and Thursday 15 October 2026. It is a four-course shared feast inspired by the island of Mauritius, where Creole, Indian, Chinese and French food come together. Vegetarian and vegan options are available, and seats are limited.
Where Is Mauritius, and Why Is Its Food So Good?
Mauritius is a small island in the Indian Ocean, east of Africa. It is known for blue water and white beaches, but the real treasure is the food.
For hundreds of years, people from India, Africa, China and France have made this island their home. Each group brought its own recipes. Today, they all share one table. One meal can have a slow-cooked curry, a fresh chutney, a soft flatbread and a crunchy fritter, and every bite works together.
That is the food we are bringing to Perth.
What Is on the Menu?
This is a shared feast, so plates go in the middle of the table and everyone tries everything. Here is what our chef is cooking.
Starters and Small Plates
Mauritian Dholl Puri: Freshly made flatbread filled with seasoned yellow split peas. Soft, warm and perfect for scooping. (Gluten-free option, vegan)
Mauritian Boulettes: Stuffed tofu, niouk yen and lamb boulettes. Little bites with big flavour.
Mauritian Fritters: Gâteau arouille and gâteau piment, served with roasted tomato chutney and combava chilli. Crunchy outside, soft inside. (Vegetarian)
Crispy Fried Okra: Okra with a light, golden crunch. (Vegetarian)
Big Plates
Lamb Salmi: Slow-braised lamb with Creole tomato, caramelised onion and aromatic spices. Rich and deep.
Mauritian Chicken Curry: Fragrant island spices with slow-braised chicken.
Mine Frite: Wok-fried Mauritian noodles with cabbage, carrot, garlic chives, ginger, soy and egg. A street-food favourite.
Mushroom and Chouchou Salmi: A Mauritian-style stew of mushroom and chouchou with aromatic spices and herbs. (Vegetarian)
Cauliflower and Eggplant Curry: A creamy curry with tender vegetables and warming spices. (Vegetarian)
Sides
Lentil Fricassée: Lentils cooked slowly with aromatic herbs and spices. (Vegetarian)
Chatini Pomme d'Amour: Fresh tomato chutney with herbs, onion and a touch of chilli. (Vegetarian)
Steamed Basmati Rice: Light, fluffy and ready to soak up every sauce. (Vegetarian)

How to Eat Like a Local
You do not need any special skills. Just follow these tips:
Share everything. Put the plates in the middle and pass them around.
Mix and match. Try curry, rice, chutney and flatbread in one bite.
Start small with chilli. You can always add more heat.
Ask our team. If you are unsure about a dish, just ask.
Save room for dessert. The crème brûlée is worth it.
Vegetarian and Vegan? You Are Covered
Mauritian cooking is full of lentils, vegetables and spice, so there is plenty for everyone. Many dishes on our menu are marked vegetarian, and the dholl puri is vegan with a gluten-free option. Please tell us about any dietary needs or allergies when you book, so our kitchen can plan ahead.
